This thick, custard-like bake gets its golden color and heady aroma from saffron — a spice that reached Gotland centuries ago through the island's medieval Hanseatic trade routes via Visby.

Rice, milk, eggs, and a generous pinch of saffron and cardamom are baked into a dense, custardy slab, then cut into squares and served warm with whipped cream and fruit soup. It's a fixture at Gotland's bakeries, cafés, and summer markets around Visby.

Why it's made this way: Visby was a major Hanseatic trading port in the Middle Ages, and the spice trade left saffron unusually embedded in Gotland's home baking compared to the rest of Sweden.
