Pitepalt

Bite into a properly made pitepalt and you'll hit a hidden core of salted pork and onion buried inside a fist-sized ball of raw and boiled potato dough.

Grated raw potato is mixed with boiled potato, flour, and salt into a heavy dough, wrapped around a nugget of diced pork, then simmered in salted water until firm. Norrbotten market stalls sell them hot, split open, and drenched in melted butter and lingonberries.

Why it's made this way: The dense, portable dumpling was built to store energy through Norrland's long winters, giving farm and forestry workers a filling meal that traveled and reheated well.
