This towering egg-and-sugar cake is baked the slow way — dripped onto a rotating spit over open flame for hours — and it's so tied to Skåne that it now carries EU-protected status, like Champagne.

A batter of egg, sugar, and potato flour is ladled over a slowly turning spit above an open fire, building up layer by layer into a tall, ridged cone. It's sold whole or by the slice at Scanian markets and bakeries, especially around weddings and festivals.

Why it's made this way: The recipe likely crossed over from Denmark when Skåne was still Danish territory, and it stuck around as a showpiece cake for the region's grandest celebrations.
