Stockholm's most famous herring cart has been frying the same Baltic catch dockside at Slussen since the 1970s, and locals still queue for it at lunch.
Whole Baltic herring fillets are breaded, deep-fried until the skin crackles, and stacked into a soft bun with mashed potato, pickled cucumber, and a swipe of remoulade or lingonberry. It's sold hot straight from harborside kiosks and food trucks around Stockholm's waterways.
