Saheena — street food from Chaguanas, Trinidad and Tobago

It's made from dasheen bush, a taro-family leaf, rather than spinach, despite being commonly translated as "spinach fritter" on English menus.

Dasheen bush leaves are coated in a spiced split-pea flour batter and deep-fried into flat, savory fritters, sold hot with tamarind or pepper sauce at Chaguanas' Indian food stalls.

Why it's made this way: Saheena is a staple of Trinidad's Indo-Caribbean street food repertoire, and Chaguanas' large Indian food-vendor scene makes it one of the most reliable places to find it fresh.
