It's often eaten with the same tamarind and pepper sauces made for bake and shark, since the two snacks are sold from adjacent stalls along the same Maracas beach road.

A ball of seasoned mashed potato is enclosed in dough and deep-fried into a puffed, golden pastry, split open and filled with tamarind sauce, chutney, and pepper at roadside stands.

Why it's made this way: Along the Diego Martin approach to Maracas Bay, aloo pie vendors set up as the savory, meat-free counterpart to the beach's famous shark sandwiches.
