The dish's national fame is largely credited to a single beach stall, Richard's Bake and Shark, which turned a simple fried-fish sandwich into a pilgrimage food after opening in the 1980s.
A flat fried "bake" bread is split and stuffed with battered, deep-fried shark, then piled with a build-your-own bar of tamarind sauce, garlic, pepper, and shredded lettuce at stalls facing Maracas Beach.
