Vendors keep the pot simmering directly on the sand over a wood fire, refilling it through the day as the morning's catch comes in from boats pulled up right beside the stand.

Freshly caught fish is simmered whole in a light broth with dumplings, provisions, and herbs, then ladled into cups for beachgoers along Mayaro's shoreline as an afternoon pick-me-up.

Why it's made this way: Mayaro's fishing boats land their catch directly on the beach each morning, letting broth vendors work straight from the day's fish rather than a market supply chain.
