Hawaiian shave ice traces back to Japanese plantation workers' kakigori, brought to the islands in the early 1900s and shaved so fine it's often described as feeling like snow rather than crushed ice.
A block of ice is shaved into ultra-fine flakes and mounded into a cup, then soaked in layers of tropical syrups like lilikoi, li hing mui, or coconut. Some shops tuck a scoop of ice cream or sweet azuki beans at the bottom.
