A true Maryland crab cake is bound with almost no filler — just egg and a little mayo and crushed crackers — so it's mostly lump Chesapeake blue crab meat held together by Old Bay seasoning.

Jumbo lump blue crab meat is lightly bound and pan-fried or broiled into a golden cake, served on a bun or plain with a wedge of lemon. Waterfront crab shacks and stands sell them from Baltimore to the Eastern Shore.

Why it's made this way: The dish depends entirely on Chesapeake Bay blue crab and the Old Bay seasoning blend, both native to Maryland's bay culture.
