Halifax made the donair its official city food in 2015, the only Canadian city with an officially designated signature dish.

Spiced beef is cooked on a vertical rotisserie, shaved thin, and stuffed into a soft pita with tomato, onion, and a distinctive sweet, garlicky condensed-milk sauce found almost nowhere else. Late-night stands across Halifax serve it as the go-to after-bar food.

Why it's made this way: The donair's sweet sauce was invented specifically in Halifax by Greek immigrant restaurateurs adapting the gyro for local tastes in the 1970s, and it never spread far beyond Nova Scotia in this exact form.
