The taffy is made by pouring boiling maple syrup directly onto packed fresh snow, where it instantly thickens enough to be rolled onto a wooden popsicle stick.
Hot maple syrup, reduced until thick, is drizzled in a line over a trough of clean snow, then rolled up on a stick as it cools into a chewy candy. Sugar shacks (cabanes à sucre) across rural Québec serve it outdoors every spring during sap season.
Why it's made this way: Québec produces roughly 70% of the world's maple syrup, and the sugar-shack tradition of tapping trees each spring is central to the province's identity.
