Conch shells are traditionally blown as horns to call fishermen home or signal news across a village, so the word lanbi names both the food and the instrument.

Conch meat is tenderized, marinated in sour orange and epis seasoning, then grilled or stewed with peppers and served straight off the coals at stalls along Cap-Haïtien's waterfront.

Why it's made this way: The Nord's Atlantic coastline around Cap-Haïtien and Labadie has long supported conch fishing, making grilled lanbi a boardwalk staple distinct from the pork-heavy interior.
