Cuajada con Miel

The cheese is often sold still warm within hours of the morning milking, since Olancho's cuajada is meant to be eaten fresh rather than aged.
Soft, mild fresh cheese curds drizzled with raw honey or cane syrup, sold in small tubs at roadside stands and rural markets, eaten with a spoon or scooped up with tortilla.
Why it's made this way: Olancho's dairy and cattle farms produce fresh cheese in volume, and roadside stands along its highways made cuajada con miel a signature quick bite for travelers.
