Its name means 'wallet pizza' because it's folded into quarters and eaten like a street sandwich, no fork required, unlike a sit-down Neapolitan pie.
This is a small, thin Neapolitan pizza, usually margherita, folded first in half and then in half again into a triangle so it can be eaten one-handed on the move. Street stalls near Naples' historic center sell it hot, wrapped in paper.
Why it's made this way: Naples needed a way to sell its famous pizza to workers who couldn't stop to sit down, so the same dough got refolded into street food.
