Reggio Emilia's version traditionally hides bits of chopped lardo inside the greens, so what looks like a plain spinach pie carries a rich, savory backbone.

Erbazzone is a thin, two-crust pie filled with sautéed spinach or chard, parmesan, and often pancetta or lardo, baked flat and cut into squares. Market and bakery stalls in Reggio Emilia sell it warm as a grab-and-go snack.

Why it's made this way: It grew from Reggio Emilia's farmhouse kitchens as a way to use garden greens alongside the region's famous parmesan, turning both into portable market food.
