The michetta's crusty, star-shaped top hides an almost entirely hollow center, which is exactly why it holds a slick of salame and butter without going soggy.

A michetta is a small, crisp-crusted Milanese bread roll with a mostly empty middle, split open and layered with thin slices of Milano salame, sometimes with a smear of butter. Market and deli stalls sell it as a grab-and-go sandwich.

Why it's made this way: The hollow shape was originally a way to stretch flour further while keeping the crust, so the crunch, not the crumb, was always the point.
