Sfincione

It's topped with breadcrumbs instead of a thick layer of cheese, giving it a drier, crunchier finish than mainland pizza and marking it as distinctly Palermitan.

Sfincione is a thick, spongy focaccia-like pizza topped with tomato, caramelized onions, anchovies, oregano, and a scattering of toasted breadcrumbs, baked in large trays. Palermo's market and street bakers cut it into squares and sell it warm.

Why it's made this way: It predates modern pizza and grew out of Palermo's convent and home-baking traditions, later becoming a staple street and market food across the city.
