Aperol Spritz

Aperol wasn't born in a chic Venice bar — it was invented by two brothers in workaday Padova in 1919 and only caught on with Venetians because the city was a short train ride away.
The Aperol Spritz mixes the bitter-orange aperitivo with prosecco and soda over ice, garnished with an orange slice. It's the defining pre-dinner ritual across Veneto's piazzas and canal-side bars.
Why it's made this way: Veneto invented both halves of the drink — Aperol in Padova and prosecco in the nearby hills — making the spritz a distinctly regional pairing before it became a global bar staple.
