Kyivskyi Tort (Kyiv Cake)

Legend has it the cake exists because a factory shift once forgot to refrigerate a batch of whipped egg whites overnight — by morning the mixture had stabilized into what became the cake's signature crisp meringue layer.

Crisp hazelnut meringue layers are stacked with chocolate buttercream and coated in more buttercream and crushed nuts. It's sold as individually boxed slices and whole cakes from bakeries and train-station kiosks — a classic take-home treat rather than a sit-down dessert.

Why it's made this way: It was developed in 1956 at Kyiv's Karl Marx Confectionery Factory and became so popular across the Soviet Union that it turned into Kyiv's edible calling card, still bought as a travel souvenir today.
