Pyrizhky are small yeast-dough buns, shallow-fried or baked until golden, stuffed with fillings like mashed potato, cabbage, minced meat, or cherries. Street vendors and market stalls sell them warm, wrapped in paper, as a one-handed snack for eating on the move.

Why it's made this way: Their sealed, portable shape made them ideal for feeding people quickly at markets and train stations, and the range of fillings meant the same dough could cover every meal of the day.
