Fried, not baked — a completely different pizza than most people picture.

Dough stuffed with ricotta, provola, and pork cracklings, then deep-fried until puffed and golden, sold folded in paper straight off the street cart.

Why it's made this way: Fried pizza predates widespread home ovens in postwar Naples — frying was a faster, cheaper way for street vendors to serve dough-based food to a hungry city.
