A whole pig is deboned, rolled, and roasted for hours as one piece — the skin comes out shattering-crisp while the meat inside stays fall-apart tender.

A deboned, rolled whole pig seasoned with garlic, rosemary, fennel, and black pepper is slow-roasted until the skin crackles, then sliced thin and piled into a crusty roll. Dedicated porchetta vans and market stalls across central Italy, especially around Ariccia and Umbria, sell it warm straight from the roast.

Why it's made this way: Roasting the whole animal as a single rolled joint let market vendors and traveling cooks serve a crowd from one vessel, and the technique became closely tied to Italian sagre (food festivals) and open-air markets.
