Pampushky

These soft rolls are brushed with a garlic-and-oil paste right after baking, which means the smell alone announces a pampushky stand before you can see it.

Small yeasted bread rolls are baked until fluffy, then brushed with crushed garlic mixed into sunflower oil while still hot. They're sold alongside bowls of borscht at soup stands and market bakeries throughout western Ukraine.

Why it's made this way: Pampushky developed as the standard bread accompaniment to borscht, and Lviv's dense bakery culture keeps them a constant on market-stall menus.
